

Pareto is a great Tuscan red wine, produced since 1987 by Fattoria di Nozzole, Ambrogio and Giovanni Folonari farms. A historic farm, that belonged to Raffaele Mattioli, the legendary president of the Banca Commerciale Italiana; eventually it was bought by Ambrogio Folonari in 1971. It is located in the northern part of Chianti Classico, Greve, not far from Passo dei Pecorai and the road that connectsl Ferrone with Greti. Its production began with the grape harvest of '87, and with the only Cabernet Sauvignon grapes grown in the Paretaio vineyard, which inspired the name.

The production technique has changed little over the years, despite the alternation of three oenologists who have overseen the various editions, Mauro Orsoni, Michel Rolland and recently Franco Bernabei. It ferments in steel vats, maceration goes from 15 to 18 days depending on the vintage and the subsequent maturation is in French oak barriques and goes from 15 to 18 months. This is one of the best examples of Cabernet Sauvignon produced in Tuscany.
