Franciacorta DOCG Dosaggio Zero 2019 from Arcari and Danesi is a pure and sophisticated expression of the Brescia terroir. This sparkling wine is made without added dosage, allowing the natural character of the grapes to be appreciated. The varieties used, predominantly Chardonnay with a small percentage of Pinot Noir, are cultivated using organic methods that respect the environment. The wine has a straw-yellow colour and fine, persistent perlage. The nose offers a complex bouquet of white flowers, notes of citrus fruits and slight hints of toasted bread. In the mouth it is extremely clean and fresh, with a marked minerality that leads to a long, incisive finish. The characteristics that have made Ceretto Blangé so famous are due to the daring and artistic spirit of oenologist Donato Lanati who, in order to enhance its fullness and aromatic intensity, refined the technique of cryomaceration in the 1980s, i.e. the contact of the skins with the must for about 12 hours at a temperature of 5°C.

This technique favours maximum extraction of the aromas contained in the grapes while safeguarding the aromatic cleanliness and delicacy of the fruit. The aromas are very intense and varied: pear, apple, peach, citrus and lots of tropical fruit. The sip confirms the intensely fruity soul, combined with a balanced freshness and excellent persistence.

The cuvée I Frati, derives from a careful selection of grapes from various parcels that, once fermented in steel, and having carried out 80% malolactic fermentation, are then blended to give the final wine its characteristic identity, fresh and soft. it is aged for 6 months in steel with the presence of fine yeasts. Its journey ends with further ageing in the bottle for a further 6 months.

In the Colle del Monaco vineyard, with a full south-west exposure, Falanghina vines grow at an altitude of 400 metres above sea level, on soils rich in limestone and tuff. The Ocone family has always been environmentally aware and thus decided to certify the cultivation as organic.

In the cellar, work involves a short cold maceration of the grapes, followed by their soft pressing and the start of alcoholic fermentation in vertical wooden vats, where malolactic fermentation also takes place. Refinement involves a short 4-month stay in steel.
